Peanut Butter Cookies

Are you a fan of peanut butter? I know we are!! Black Cat’s peanut butter cookies are incredibly scrumptious and a teaser for the palate.

These yummy cookies just screams tea time with a nice pot of tea brewing.

On to how to make this hot peanut buttery snack.

You will need

  • 200g (1 cup) sugar,
  • 50g ( ¼ cup) additional sugar to roll cookies
  • 125g butter, at room temperature
  • 1 large egg
  • 1 cup (250ml) smooth BLACK CAT PEANUT BUTTER
  • 5ml (1 teaspoon) vanilla essence
  • 3ml ( ½ teaspoon) salt
  • 3ml ( ½ teaspoon) bicarbonate of soda
  • 180g (1 ½ cups) wheat flour

Most of these ingredients are surely in your kitchen cupboard already…maybe you’ll need to pop by the corner store for one or two items (presumably you’ve ran out).

First preheat your to oven to 180 degrees C (hopefully your using and electric oven or very in tune with your gas oven). Grease a baking sheet and lay over the baking tray. In a large bowl, cream together sugar and butter until light and fluffy. Beat in egg to mixture.

Grab your smooth Black Cat peanut butter and vanilla essence pour into the mixture and whip until smooth and creamy. Stir in a pinch of salt, bicarbonate of soda (careful with the measurements as bicarbonate of soda can leave a bitter taste if too much is used) add flour and mix until well combined.

Roll the dough into 5cm balls and then roll in sugar. Place on the baking sheet and flatten with fork. Bake for 12-15 minutes (or until golden).

Remove from oven and place on a cooling rack, once cooled grab a piece and your favourite drink!
