Ice Cream Sandwiches are all the rave during the hottest months!! Not a particular fan of it myself but the kids love them! And if you wish to make something easy and delicious for the kids follow our recipe below.
- 20 Bakers Tennis® biscuits (about a whole pack!)
- 2 L vanilla ice cream
- 350 g fresh strawberries, chopped
- 5 ml ground cinnamon
- 300 g milk chocolate, roughly chopped
In a large mixing bowl, stir together the vanilla ice cream, cinnamon and strawberries until well combined. Spread the ice cream out into a baking tray lined with plastic wrap and return to the freezer to set.
Use the Bakers Tennis® biscuits as a template by measuring it out and cut the ice cream into blocks to fit between the biscuit layers, place back in the fridge for a few minutes to avoid melting.
Place the chocolate into a heatproof bowl set over a pot of simmering water (bain Marie). Allow it to melt and stir until smooth. Take out and dip the Bakers Tennis® biscuits into the melted chocolate until half of the biscuit is coated.
Allow excess chocolate to drip off then place on a wire cooling rack to set. Layer a slice of ice cream between two Bakers Tennis® biscuits and then return to freezer before serving.
